summer salad {still + life}
I thought I'd post a quick picture of my favorite fruit salad in my favorite beat-up bowl and share the recipe here with you. I'm a little hesitant to write down the particulars of this recipe because I've been making it for years and all I have, as you can see is an (also) beat-up scrap of yellow legal pad that it's written on. I'm sure I copied that recipe from someone else, likely standing at a friend's kitchen counter. If you have any idea where it's from, please, please let me know. I want to credit them AND thank them for adding such a delightful dish to our collection.
Here's how it goes: (Also, on my scrap of paper this is called "Fruit Salsa," but it just feels too chunky to me to be a real salsa. Although it might be good on chips. Worth a try. Now here's really how it goes.)
Fruit Salad
1 c cantaloupe, chopped
1 c mango, chopped
1 c strawberries, sliced
1 seeded, chopped cucumber
1/2 c red onion, chopped
1 1/2 tablespoons mint, chopped
2 tablespoons lime juice
2 tablespoons jalapeno, chopped (or to taste)
1 tablespoon honey or agave nectar
1/4 teaspoon salt.
Combine all ingredients and serve chilled or at room temperature. Slotted spoon is best, since it gets a bit liquidy. Perfect for a warm summer day!
(You'll see on my sheet that the recipe calls for green pepper. Well, I don't love green pepper, so out it goes.)
